Challenges
Odour
In 2014 the food and drinks sector in Ireland accounted for 40% of odour complaints. By its nature cooking in commercial kitchens can cause strong odours which can be a nuisance to nearby homes and businesses. If the nuisance becomes bad enough a complaint can be raised with the EPA.
Grease/Oil build-up
Cooking causes fats, oily deposits and fibrous particles to accumulate in kitchen extract system. These particulates reduce air flow efficiency and create an ideal environment for bacteria to grow. These areas if not cleaned and maintained can quickly become a fire hazard and can cause fires to rapidly spread if the grease and oil deposits ignite.
Smoke
Various styles of cooking such as flame grilling red meats can produce a significant amount of smoke. Smoke produced from these types of cooking can be very pungent and harmful when inhaled.
Solution
Odour
Odours can be dealt with using various technologies.
UV-C Lamps produce Ozone (O3) which,along with destroying grease, destroys 95% of odour in the ducting system. O3 is a highly reactive oxidant which permanently destroys grease and odour compounds.
Activated Carbon Filters are used to scrub the exhaust air and remove odours from the exhaust air. They work as an excellent addition to UV-C lamps when removing strong odours.

Electrostatic precipitators (ESPs) filter exhaust particles from a Kitchen Exhaust Canopy using the force of an induced electrostatic charge. They can remove up to 98% of the grease and oil found in the Exhaust from a kitchen canopy.
